Nettle Pakoras

I love this fun recipe for nettle and these yummy treats are excellent for picnic and community lunches. It goes well with a delicious wild garlic raita!

Nettle Pakora - makes 20

1/2 bowl of nettle top

1 handful wild garlic

260gms Chickpea flour

1 Tbsp sesame seeds

1 tsp baking powder

1 tsp curry powder

Pinch of salt

250ml water

Oil for frying

  1. Wash nettles, removing stalks (use rubber gloves) and blanch in boil water for 2 minutes. Drain and chop.

  2. Wash and chop wild garlic.

  3. In a mixing bowl combine chickpea flour, sesame seeds, baking powder, curry powder and salt

  4. Add chopped nettles and wild garlic to flour mix and stir in.

  5. Slowly add water, mixing until you have a good batter. Do not make too watery

  6. Heat oil in a wok

  7. Use 2 teaspooons to shape the mix into balls. Drop ball into the hot oil to fry for 2-3 mins, or until golden. Use a slotted spoon to remove and place on kitchen towel.
