Coconut Curry Fish Stew

This delicious fish stew is a favourite in our household at this time of year. From the wonderful cookbook “Heal your Gut” by Hilary Boynton and Mary G. Brackett. The fish and fish stock, combined with the warming spices make this a brilliant tonic for both “Kidney Yin” and “Yang” and the coconut is a brilliant “Qi” tonic. A super nourishing stew for these winter days. If you don’t have lemongrass or kefir lime leaves just add a little fresh lemon and lime zest. If you are serving to children best to leave out the chilli as children already have plenty of “heat” in Chinese medicine. To switch things up a bit you can try adding chicken instead of fish. We hope you enjoy!

INGREDIENTS

2 tbs coconut oil

2 onions, diced

3 inches frest ginger root, minced

2-3 jalepeno peppers (optioinal)

3 garlic cloves, minced

3 TBS Curry powder

1/4 tsp tumeric

1/8 tsp cayenne (optional)

tsp sea salt (to taste)

1/2 tsp ground black pepper

8 cups chicken or fish broth (or half stock half water)

1 can full fat coconut milk

1 can tinned tomatoes

1 red bell pepper

3 sticks of dried lemongrass

3 keffir lime leaves

2 pounds of cod or haddock cut into 2 inch cubes

1/2 cup fresh corriander

lime/lemon zest for garnish

Avocado diced (optional)

METHOD

Heat the oil in the saucepan. Add the onions, and saute for a good 5 minutes, until soft. Add the ginger, jalepeno and garlic and saute for another few minutes. Add the spices, and toss with the onion mixture. , stirring for about 2 minutes. Add the stock, coconut milk, tomatoes, bell peppers, lemon grass and kefir lime leaves. Bring to the boil. Reduce and simmer for 25 minutes. Add the fish and corriander, and cook for an additional 10 minutes (or just leave to stand and let the fish cook in the warm soup). Garnish with lime/lemon zest, diced avocado and more corriander to serve.

Lovely served with rice noodles or rice.
